I concur, peeling winter squash is a chore, I like the kind of peelers used in this video:My two favorite ways to use butternut squash is to boil it and simply puree it as a side vegie, or turn the puree into soup just like pumpkin soup, by adding a little maple syrup, chicken stock, chinese five spice, butter and some cream. I've actually made squash pies out of butternut and they turn out similar to pumpkin pies.This recipe looks good too, thanks coolchef, that's an outside the 9 dot box way of using squash, I'll have to try it.

Any good tips for peeling those suckers? I used to have this awesome peeler that worked GREAT!! But, like the socks in the dryer -it disappeared.
I will make this--sounds great and this time of year I have alot of this squash.
