I don't buy VPW's claim (taken from Bullinger's Companion Bible) that Jesus was not crucified on a cross with a cross-piece. There is historical evidence that this was the normal means of Roman crucifixion.
However, its use as a symbol has had various meanings, although its use as a Christian symbol is probably the most widespread. Check out the following entry from Symbols.com:
So I think it's rather unlikely that God would design a molecule in that shape specifically for its symbolism, when it is only a Christian symbol in the western culture.
