Summer dinner ideas - suggestions?

I'm bored with my current repetiore of recipes... Want something a little different and lighter for summer. Anybody have any ideas? Grilled items would definately be appreciated, along with salads.

And if anybody knows how to cook pizza on the grill, I'd like to know - saw it once on some cooking show, but can't remember how!

I have a good recipe for grilling London broil and serving it one night, then serving the leftovers cold over a salad.

I'll get you some recipes tomorrow - gotta go rummage through my magaizines....;)

Corn Salad

All "to taste" and balance the colors:

1-2 cans white shoepeg corn

2-4 tomatoes chopped (plum tomatoes are best, but you need more of them)

2-4 stalks of green onions chopped

1 heaping teaspoon / tablespoon mayo

dash of salt

more of pepper

Mix it all together and let the flavors "mingle" in the fridge for a few hours - best made the night before. I like it spicy so I add more onions and pepper than Mama does.

Pico De Gallo

also "to taste" and desired color balance

4-6 Roma tomatoes, seeded and diced

1/2 - 1 diced red onion

1/2 - 1 diced red bell pepper

1/2 - 1 diced green bell pepper

1+ minced fresh jalapeno pepper, without seeds

1+ small clove garlic, minced

About 1 tablespoon finely chopped fresh cilantro

About 1 teaspoon fresh lime juice

Splash of Olive Oil

Salt and freshly ground black pepper to taste

Of course, my favorite is a good ole Crawfish Boil

Spinach Salad with Strawberries

Dressing Ingredients

1 1/2 Tbsp. lemon juice, fresh

1/8 tsp. ginger, ground

1/2 tsp. orange zest

1/2 tsp. Sweet & Slender

1/2 Tbsp. parsley, dried OR 1 Tbsp. freshly chopped, (preferred)

2/2 tsp. lemon pepper

3 Tbsp. olive oil

4 drops hot chili oil

Salad Ingredients:

6 cups fresh spinach, washed and torn

2/3 cup sliced strawberries (about 6 whole)

2 radishes, sliced

1 green onion, chopped

3 Tbsp. pumpkin seeds, hulled

In a small bowl, combine the dressing ingredients thoroughly.

Place the prepared spinach into a serving bowl. Toss it with the salad dressing. Garnish the salad with the remaining ingredients. Enjoy!

Pizza on a Grill

Oil your grill very well so the dough doesn't stick. Place your pizza crust on the grill. When it browns (lightly) and bubbles, flip it over. Brush oil on the crust, then add your pizza sauce, then your toppings. Do this fast, so your crust won't burn. Then close the lid and cook until your cheese melts, unless you're vegan, then cook it 3-5 minutes.

here is a nice dessert soup for the summer

and easy

strawberry champagne soup

5 cups quarted berries

1/4 cup sugar

1/8 tsp salt

1 cup of bubbly

puree berries with salt and sugar til smooth

cover and chill for 2 hours

stir in bubbly just befor serving

garnish with a fresh mint leaf

nice!

OK, so this may sound a little strange, but it really worked well this past week:

Take a container of plain yogurt, pop a couple of small holes in the lid and put it on its side in the kitchen sink for a couple of hours. Most of the liquid will drain from the yogurt, leaving it the consistancy of thick sour cream. Mix in a little vanilla and something a little sweet. You end up with a really yummy creamy vanilla yogurt that I served over fresh fruit this week.

It was good. I used stevia for the sweet part - didn't take much at all to sweeten the yogurt and if you serve it over fresh fruit, you don't need much at all!

For the fruit I used fresh strawberries, watermelon, peaches, and pineapple... But I think just about anything would taste good with it.

I got your attention, didn't I...... :biglaugh:

Honestly, I like lots of slow cooked things because it means I can do other things while the food cooks.....

Now, how I spend that time is another story.....;)
