It's got to be some kind of white onion. Still lumpy and still in it's skin. It's in it's raw form? It's an unrenewed mind onion still in it's old man nature? Where's my coffee.
Poutine is an Acadian/New Brunswick treat. I grew up eating these at Christmas and Easter. The whole family would gather early in the morning and peel 50# or more of potatoes. It was a lot of work making them but It was well worth the effort.
I still make them today but we use automatic peelers and motor powered graters (hand made) . I belong to an "ACADIAN SOCIETY" and we make and sell them to finance a Scholarship each year for the High School. We usually make 500 at a time and sell them all.
