waterbuffalo Posted February 5, 2007 Share Posted February 5, 2007 (edited) Tried this one for a Super Bowl snack and it was great: Pumpkin Spice Cupcakes 1 Spice Cake mix 1 12 oz. can diet coke, minus 2 T 1 15 oz. can Pumpkin Mix all together with an electric mixer. Drop by spoonfuls into paper cupcake holders or spray cupcake pan with Pam. Bake 350 for 20 minutes. Cool completely before eating. They will be very moist and chewy. Makes 24.
