1. In a skillet, saute onion in butter until tender. Remove from the heat. In a bowl, lightly beat one egg. Add the onion, potatoes, flour, salt, pepper and hot pepper sauce, if desired.
2. Shape into four to six patties; place on a greased baking sheet. Lightly beat remaining egg; stir in water. Brush over the potato cakes. Bake ate 375 F for 20-25 min or until heated through.

ok this is a good side veg
mushrooms au sherry
sautee tri colored peppers and red onion in olive oil
add shrooms add just befor cooked add a BIG splash of sherry

Chef, that's my second favorite way to eat rainbow peppers! Raw being my first choice. :) Vixen loves them, too!
For a snack, especially on "movie night"
Chop up a cauliflower into little florets:
Spread them out on a cookie sheet
Lightly brush them with olive oil
Broil at 375 for about an hour or until they start to caramelize. (I go till they look really dark)
Then eat like popcorn.

Corn Salad
This is also "to taste" and it's better the second day.
2 Cans White Shoepeg Corn
2 (or more) chopped tomatoes
1/4 (or more) chopped green onions
1 Tbsp Mayonnaise
Salt
Pepper (I add a lot of pepper to this salad)
I've won some local contests with this recipe, unbelievably.
